Locust bean gum is an odorless plant endosperm refined polysaccharide,mainly containing mannose and galactose with a molecular weight of about 300,000 daltons, which is an extremely good thickening and stabilizing agent. lts most important feature is that it has good gel synergistic effect with agar, carrageenan,xanthan gum and other hydrocolloids which makes the amount of the compounded colloids less and improves the gel structure.
