Pediococcus pentosaceus belongs to Gram-positive, anaerobic Firmicutes. They are coccus-like microbes with the characteristics of being non-motile and non-spore forming. P. pentosaceus are categorized as a “lactic acid bacteria”, because the end product of its metabolism is lactic acid. P. pentosaceus is being studied for its ability to produce an antimicrobial agent (bacteriocins) and its use in food preservation.
