Poly‑γ‑glutamic acid (γ‑PGA) is a water‑soluble, biodegradable natural anionic polymer whose high water‑holding capacity, viscosity, metal‑chelation and tastelessness make it valuable in the food industry. Low‑molecular‑weight γ‑PGA serves as an anti‑freeze agent, thickener and bitterness‑masking agent, improving the texture, moisture retention and shelf life of frozen foods, breads and noodles; in beverages it enhances taste, promotes calcium and magnesium absorption, and prevents tea scum formation. In cosmetics, γ‑PGA’s excellent moisturizing, water‑retention and antioxidant properties are incorporated into creams, masks and sunscreens to increase skin hydration, delay dryness and improve vitamin solubility.
